This recipe was adapted from Chef Kris Gaudet from Kidney Community Kitchen, modified by Fanny Whelan, RD
Ingredients
Makes 8 servings
- 1 tbsp canola or other neutral oil
- 2 lbs boneless, skinless chicken, white meat
- 1 large onion, sliced
- 1 large green pepper, sliced
- 1 small red pepper, sliced
- 1 small yellow pepper sliced
- 2 cloves garlic, finely diced
- ¼ cup honey
- Season with pepper to taste
Instructions
- In a large frying pan, fry the onions on medium heat until soft. Stir frequently.
- Remove from the pan.
- In the same pan, fry the chicken and garlic until the chicken is browned on all sides.
- Add in the cooked onions and peppers.
- Continue cooking until the peppers have reached the level of preferred crispness.
- Stir in the honey and turn off the heat. Taste the sauce and add more honey if necessary. Season with salt and pepper to taste.
