Our March recipe is quick and easy so you can spend less time cooking and more time outside enjoying the spring weather: Honey Garlic Chicken.

This recipe was adapted from Chef Kris Gaudet from Kidney Community Kitchen, modified by Fanny Whelan, RD

Ingredients
Makes 8 servings

  • 1 tbsp canola or other neutral oil
  • 2 lbs boneless, skinless chicken, white meat
  • 1 large onion, sliced
  • 1 large green pepper, sliced
  • 1 small red pepper, sliced
  • 1 small yellow pepper sliced
  • 2 cloves garlic, finely diced
  • ¼ cup honey
  • Season with pepper to taste

 Instructions

  1. In a large frying pan, fry the onions on medium heat until soft. Stir frequently.
  2. Remove from the pan.
  3. In the same pan, fry the chicken and garlic until the chicken is browned on all sides.
  4. Add in the cooked onions and peppers.
  5. Continue cooking until the peppers have reached the level of preferred crispness.
  6. Stir in the honey and turn off the heat. Taste the sauce and add more honey if necessary. Season with salt and pepper to taste.
